Winemaking:
The Sauvignon Blanc grapes were hand harvested when the flavours were fully developed and the acidity was just right. We selected our harvest date based on the overall ripeness and flavours and pressed it in our gentle bladder press. It was cold settled after pressing and then racked into stainless steel for a slow
fermentation at cool temperatures to enhance aromatics and preserve fruitiness. The alcoholic fermentation was encouraged to go dry and the wine was aged on it its primary lees. We frequently agitated the tank to keep the lees in suspension and add mid-palate texture and creaminess. Sauvignon Blanc was then protein stabilized, cold stabilized and filtered before bottling.

Aroma:
Expressive aromas of gooseberries, grapefruit, passionfruit and citrus jump from the glass. Secondary aromas of floral notes, wet stone and herbaceous lemongrass follow in this intense wine.
Palate:
The aromatics on the nose follow through and continue to build on the palate. Fruit forward flavours of gooseberry, passionfruit, and grapefruit are followed by refreshing citrus key lime notes, fresh cut grass, hints of wet stone and finishes with a creamy round texture. The vibrant acidity makes this wine refreshing to enjoy on its own or versatile to pair with foods such as asparagus risotto, cream pasta, grilled vegetables, seafood and white meats.
