Winemaking: Made from Grapes grown in Prince Edward County, a region known for its limestone rich soils and terrior that produces work class Chardonnay. The Grapes were hand harvest in the cool of the morning and delivered to Adamo where we whole cluster pressed. The juice was racked into French Oak barrels for alcoholic fermentation, malolactic fermentation and aged for 10 months. The individual barrels were then blended together in a tank to harmonize and a light clarification and filtration was carried out before bottling
