Winemaking: Hand harvested, crushed and destemmed into small batch vessels for a cold soak and then alcoholic fermentation. After fermentation the Pinot Noir was pressed off to settle, and then racked into French Oak barrels where it aged for 10 months to gain complexity and integrate layers of fruit and tannin. Through blending trials, barrels were selected to be blended together into tank and lightly filtered before bottling.
Appearance: Bright garnet with a ruby hue.
Aroma: A combination of ripe cherries & raspberries, hints of spices, a gentle earthiness, savory dried herbs with toasted oak nuances.
Palate: The aromatics on the nose follow through and continue to build on the palate. The mid-palate holds soft, silky tannins and palate cleansing acidity with a fruity finish. This medium-bodied and balanced wine showcases fruitiness and toasty notes with texture and a lingering finish. A versatile Pinot Noir that is great on its own or pairs well pizza, mushroom risotto, or BBQ salmon
