Winemaking:
The Cabernet Sauvignon was hand-harvested when the grapes had perfect balance and phenolic ripeness. We started by doing a 5-7 day cold soak, after which the grapes were warmed up the fruit for alcoholic fermentation. Once alcoholic fermentation was completed and the tannin structure was just right, we gently pressed off the skins and pumped to a settling tank. After settling, the wine was put into specially selected French Oak barrels for malolactic fermentation and aging, where it was carefully monitored for 20 months. A light filtration is carried out before bottling.
Appearance:
Opaque garnet with a ruby hue.
Aromas:
Sweet ripe blueberries, black currants, prunes, blackberries, figs, leather and baking spice. Underlying hints of roasted almonds, vanilla and subtle violet notes.
Palate:
Fruit flavours of blackberries, blueberries, leather and dates. Followed by a combination of vanilla, black currants, and toast. Concentrated and ripe, medium-full bodied wine with depth and a textured mid-palate of toasted hazelnuts, clove and cocoa. Layered tannins and balanced acidity with lingering flavours of cocoa and coffee on the finish.
