The juice was pumped to a stainless steel tank for cold settling and clarification before racking to a secondary stainless steel tank for alcoholic fermentation. The alcohol ferment was carried out at 14 degrees Celsius to maintain freshness and fruitiness in the wine. When alcoholic fermentation was complete, we sulphured the wine to prevent malolactic fermentation and aged the wine in stainless steel on its fine lees to develop mid palate texture. This dry Rose is fresh and fruity with subtle elegant floral notes and hints of creaminess along with a tight and focused mid-palate structure.
